Laurie says "Tablet has always evoked such strong childhood memories. Growing up in Scotland, tablet was always a very popular sweet treat or after dinner sweet you would enjoy with a coffee.
My Gran Martha would make batches of tablet and I never tasted anything like it. She made everything from scratch. Their garden was full of fruit and vegetables and my Pa had a number of hives he would collect his honey from.
from gooseberries to sugar snap peas. The garden was like a cafe of treats we could tuck into.
My sister and I never forgot the taste of the tablet and as we grew up, we noticed no other tablet tasted as good as our Gran's.
Year after year we would buy a small packet from a farmers market, sweet shop or supermarket and it always tasted stale or it was more like fudge.
It's taken me about five years to be able to feel confident enough and proud enough to sell it to the public. Every batch is made from scratch in my kitchen with natural, organic ingredients. I take my time and enjoy the process, from whisking to cutting to bagging.
